Simple Protein Lunch

Happy Tuesday afternoon everyone!
I hope your day is going amazingly – so far mine is dull but that’s fine! LOL
I’ve got some stuff 3D printing for my Etsy Shop and I made a good lunch (I would have rather had a taco salad from our favorite Mexican place) but I decided cooking was best!
Gotta get into that mindset or I am never going to see results!

Today’s Lunch!

We’ve got a lot of random stuff in the kitchen and I wasn’t quite sure what I wanted for lunch today so I just kind of made something up!
It was actually delicious!

  • One boneless, skinless chicken breast
  • One tablespoon of hooters hot sauce
  • One large egg
  • One cup fresh spinach
  • Five black olives
  • Shredded Parmesan cheese 1/4 cup (or to your taste)

Cook the chicken on medium on stove until almost done and then add the hot sauce (I used Hooters – but Red’s is also good). When the chicken is done set it on your plate.
Cook fried egg to your liking and place it on top of the chicken.
Mix spinach, olives and cheese together and add dressing (I chose ranch but your choosing is up to you!)

It’s simple, it’s easy and it’s delicious!
For me I do WW blue plan and it was 8 points for lunch!
Filling, delicious, and healthy!
All things I need.
